Healthy Breastmilk Pumpkin French Toast

You all know by now that I am NOT into wasting breastmilk. If you have no storage space for your milk or your milk is about to expire, consider cooking with it!! This is my family's go-to french toast recipe because it is both healthy AND delicious. It is phenomenal when used with breastmilk, but of course it can be used with any other milk as well. Give it a go and tell me what you think!

Ingredients:

  • 2 eggs
  • 2-4 ounces of breastmilk (depending on how you like your batter consistency)- use more milk for thinner batter and less milk for thicker consistency
  • 3/4 can of pure pumpkin puree
  • cinnamon to taste
  • vanilla to taste (I am obsessed with pure ground vanilla, but vanilla extract will also work)
  • butter (to coat the pan before laying down toast)
  • whole wheat bread or any bread you prefer

Instructions:

  1. Whisk eggs, pumpkin, milk, cinnamon, and vanilla until combined and form a batter of your desired consistency.
  2. If you are cutting shapes or strips in your bread, do-so now. (optional, but the kids love it!)
  3. Turn stove on medium heat and coat pan with a layer of butter
  4. Soak your bread on each side for about 10 seconds until batter has fully covered both sides
  5. Place on the pan in a single layer and let cook for approximately 3 minutes on each side. (Note: Cook it to your preference. Some people like their french toast eggy, others like it cripsy and not eggy at all!)
  6. Remove from pan and serve. Feel free to top with fresh syrup, powdered sugar, or fresh fruit.
